Marinated Artichoke Hearts and Sun-Dried Tomatoes

Put this together with simple pantry ingredients in just a few moments!

We love little nibbles before a dinner party. Little bites of delicious treats while we catch up a bit, pour a glass of wine, or while we prep the meal. It can be something as simple as a bowl of spiced nuts, a little brick of cheese with crackers, or a dip or spread.

Make ahead

I decided last weekend to make a batch of marinated artichoke hearts and sun-dried tomatoes to top some baguette slices. It is a simple recipe that you can make the day before a party and have ready to pull out when you hear your guests arrive.

Of course, if you can find fresh artichokes, use those, but they are as rare and fleeting as a tropical bird in Vermont except for about a tiny window in late summer. But frozen or canned work fine here, just look for whole artichokes and cut them up yourself. They will have a longer stem, which is delicious, and they will be firmer. Use your favorite sun-dried tomatoes.

Marinated Artichoke Hearts and Sun-Dried Tomatoes

  • 6 artichokes, quartered lengthwise
  • 6 sun-dried tomatoes, chopped
  • 6 leaves of basil, torn
  • 3 cloves of garlic, minced
  • 2 sprigs of fresh thyme
  • Pinch of crushed red pepper flakes
  • 1/2 small purple onion, minced
  • 1/4 cup extra virgin olive oil
  • Zest and juice of one fat lemon
  • Salt and pepper to taste.

Just mix it all together! Mix the artichokes, tomatoes, basil, garlic, thyme, and onion in a large bowl. Whisk together the olive oil and lemon juice and add to the vegetables. Taste and season to your own liking.

Let the marinade rest for a couple of hours (not absolutely essential) in the refrigerator. Serve on baguette rounds! This will keep several days in the refrigerator, maybe…

  1. Lovely combo…my family loves artichokes, we had steamed artichokes last night, my 8 year old grandson ate a whole one and 1/2 of another one!

    We have the same tastes Dorothy, you would think we grew up in the same household. I like to serve marinated artichokes as appetizers when I’m serving an Italian meal to guests. Yours look delicious. When I lived in New Hampshire, Market Basket used to carry fresh baby artichokes but as you say, for only a short time of the year.

    This sounds delicious! It reminded me of one of the dumber culinary things I have done though. My husband gave me a fruit drier one summer. I dried a bunch of cherry tomatoes to crispiness. They were so sweet I ate lots of them right off the drier racks, but regretted it when they rehydrated in my tummy back to their normal size! Garnish only for these treats!!

    1. I used the tomatoes I dried myself last year and just stuck in a jar. They were nice and pliable. You could also use oil packed, I think that would add additional flavor!
