Please, don’t worry if your lion is a bit crabby.

Lion’s Mane Mushroom Cakes

  • 1 tbsp. chives, minced

Always buy extra corn while it is cheap and tuck what you don’t eat in the freezer. You will thank yourself in February.

My daughter and I always plant morning glories because my mom used to plant them on her front porch. Heavenly Blue, on my back porch, loves to take over everything as the season wears on.

You have the wondrous talent to post really original recipes one cannot wait to make and taste – like both of these after reading your story . . . but cannot go past the mushroom cakes – oh, yes please!

    1. Thank you so much! I was so pleased at how these came out from the perfect texture to the dreamy flavor!

  2. Gail says:

I could eat mushrooms as a meal. 🍄‍🟫🍃🍄

    1. They are small so good!!!

  3. Mary says:

Love your shady front porch with the trailing morning glory with a serving of mushroom cakes please. :))

    1. I’ll serve them right up, but it’s my back porch- even better!

Now that is August in a plate and I’m here for it. That lion’s mane cake looks incredible!

    1. Thanks! The manes are grown locally and this week at the farmers market they were superb! I was really pleased since I was on the lookout for them.

  5. Your morning glories are stunning and these mushroom cakes sound delicious (and look very much like crab cakes!). Served with a corn salad …. so refreshing! The mention of only corn for dinner reminded me of many lunches consisting of only fresh local Montauk corn and home-grown tomatoes …. so light and tasty for summer. Lovely post, dear sis!

    1. Thank you babe! Corn for lunch? That was yesterday!

I’m afraid I don’t like the texture of Lion’s Mane mushrooms, but mashed up like this I might.

    1. The texture here was pretty much identical to lump crab meat, I was pleasantly surprised.

This was almost as good as being at the fair! I enjoyed looking at the map of The Big E and all the places I would make a stop! The mushroom cakes sound delicious with the salad.

    1. Thanks Suz! The cakes were delicious, even the husband loved them!

  8. Chef Mimi says:

Great post! I can’t wait to see Delicata here. Love those morning glories!

    1. It seems I just used the last of last year’s delicata!

  9. leggypeggy says:

I’ve never seen lion’s mane mushrooms or delicata squash in Australia. Thanks for the introduction.

    1. With our tiny planet Peggy, it won’t be long before you are seeing them everywhere!

This is a bountiful time of year. I love Heavenly Blue morning glories, but mine bloom later in Sept.

    1. They seem to bloom when they want around here! Always lots of leaves, this year, lots of blooms too.

      1. Joni says:

Mine are still trying to climb the fence!

        1. Oh, they will make it I’m sure!

          1. Joni says:

Maybe not before our first frost! That sometimes happens.

Your Morning Glory on your back porch!!!
I can’t get enough of it!!!
    Beautiful, so beautiful!
    Thanks for the recipes too.

    1. The morning glories touch the old memory nerve and I think of my mom when I watch them grow.

  12. With those morning glories blooming so perfectly my go to spot would be that table! I would love siting there just watching the flowers grow! All those outdoor fair events sound like much fun in the sun!

    1. We eat every meal possible out there on the porch as long as it isn’t driving rain. Such a lovely spot to relax.

  13. Ha ha what a very witty title 🙂 …. I don’t think I could find Lion’s mane mushrooms where I live (south-east of Rome) and crabs aren’t easy to find either, sigh. So my enjoyment of this recipe will reamain entirely vicarious. The health properties of lion’s mane are supposed to be incredible so that’s an extra bonus. Your corn looks amazing – we can’t get that either in Italy (not that kind of quality I mean).

    1. Well, we all have to work with what we’ve got, and usually that is plenty! Lions mane really are nutritious and I’m glad so many of our local mushroom growers are supplying them.

  14. Hi Dorothy, your posts encourage me to see the East Coast. It’s been too long since I have been there. Thank you for the recipe. I love mushrooms, and will have to try your recipe.

    1. I hope you enjoy it Mary, and if you make it to the east coast come to Vermont and I’ll cook for you!

The mushroom cakes look delicious! I’ve seen them prepared like steaks too, I really need to pick some up and experiment. Your back porch is so inviting, my jaw dropped at the sight of that photo. I’ve tried growing Heavenly Blue for three years and never got a single bloom, just a ton of foliage. Never had that problem with any other morning glory variety.

    1. I’m told that they love to be starved. They grow best in crappy soil and if there is too much of the good stuff you will get bountiful leaves and no blooms. This happened in my garden two years ago, all that compost and not a bloom!

  16. You are such a brilliant inspiration Dorothy! From the activities, to the morning glories, and fabulous food. I adore your posts. This recipe looks fabulous. Hugs, C

    1. Thank darlin’! Can you tell we like to feed people around here?

  17. Thanks for the bursts of fun and flavors. You have left no loose ends. We cannot have food complements “lion” aka: lying around. 😋

  18. Forestwood says:

Your back porch looks so delightful! Interesting about the lion’s mane mushrooms. Be it with crab or mushrooms, the patties and the salad had me salivating.

    1. Thanks Amanda! I love the patties both ways, but our local crab is getting hard to find. It has probably been over-harvested like everything else!
We live on the back porch all summer. All our meals unless it is driving rain, and where I sip my morning coffee with the birds.

      1. Forestwood says:

How lovely to have an outdoor space you can enjoy – would a firepit or heater and blankets extend its use?

        1. We do have a fire pit, and I’ve thought of adding some grilling things to the top, but we haven’t gotten around to it. We have a nice fireplace inside, and that makes me happy in our frigid winters.

          1. Forestwood says:

            It sounds very cosy
