Lion’s Mane Mushroom Cakes

  • 1 tbsp. chives, minced

Always buy extra corn while it is cheap and tuck what you don’t eat in the freezer. You will thank yourself in February.

My daughter and I always plant morning glories because my mom used to plant them on her front porch. Heavenly Blue, on my back porch, loves to take over everything as the season wears on.

You have the wondrous talent to post really original recipes one cannot wait to make and taste – like both of these after reading your story . . . but cannot go past the mushroom cakes – oh, yes please!

    1. Thank you so much! I was so pleased at how these came out from the perfect texture to the dreamy flavor!

I could eat mushrooms as a meal. 🍄‍🟫🍃🍄

    1. They are small so good!!!

Love your shady front porch with the trailing morning glory with a serving of mushroom cakes please. :))

    1. I’ll serve them right up, but it’s my back porch- even better!

Now that is August in a plate and I’m here for it. That lion’s mane cake looks incredible!

    1. Thanks! The manes are grown locally and this week at the farmers market they were superb! I was really pleased since I was on the lookout for them.

  5. Your morning glories are stunning and these mushroom cakes sound delicious (and look very much like crab cakes!). Served with a corn salad …. so refreshing! The mention of only corn for dinner reminded me of many lunches consisting of only fresh local Montauk corn and home-grown tomatoes …. so light and tasty for summer. Lovely post, dear sis!

    1. Thank you babe! Corn for lunch? That was yesterday!

I’m afraid I don’t like the texture of Lion’s Mane mushrooms, but mashed up like this I might.

    1. The texture here was pretty much identical to lump crab meat, I was pleasantly surprised.

This was almost as good as being at the fair! I enjoyed looking at the map of The Big E and all the places I would make a stop! The mushroom cakes sound delicious with the salad.

    1. Thanks Suz! The cakes were delicious, even the husband loved them!

I’ve never seen lion’s mane mushrooms or delicata squash in Australia. Thanks for the introduction.

This is a bountiful time of year. I love Heavenly Blue morning glories, but mine bloom later in Sept.
